Polish Gingerbread Recipe (Piernik)

Gingerbread Recipe

4 eggs

2 cups sugar

4 cups + 4 tablespoon flour

1 cup raisins

1 cup honey

1 cup sour cream

2 teaspoon baking soda

1 teaspoon nutmeg

½ teaspoon grounded cloves

¼ teaspoon grounded pepper

Grated lemon skin from one lemon



Process:

Beat eggs with sugar then add all other ingredients, mix well.

Grease and flour two 6 by 2 inch (15x5 cm) cake pans

Bake 1 hour in 170 C

After cooling cut each cake into two pieces and smear the bottom piece of each cake with plumbutter (powidla).

Cover the gingerbread with chocolate icing.
