Whipped Cream Icing Recipes

Try these easy cake frosting recipes, next time you make a special occasion cake.



There are plenty of types of whipped cream icing. I wanted to share with you 4 different types of cake frosting recipes. But first, let me tell you what you need to watch out for when using each easy frosting recipe.

Whipped creams should not be overbeaten, so stop when it softly mounds when dropped from a spoon. You should not whip the cream until stiff peaks form.

You also have to keep in mind that whipped cream has to be refrigerated, so use a cake that will not harden when cooled, such as sponge cake.

Another thing that helps making this icing is chilling all ingredients, sugar included. If you have room in your fridge, you could also chill the mixing bowl and the beaters.

Whipped Cream Icing Recipe

Ingredients:
• 1 cup of heavy cream (250ml)
• 1 tablespoon of sugar
• ½ teaspoon of Vanilla extract

Prepare the easy frosting:
• Place all ingredients onto the fridge and cool for at least 15 minutes, bowl and beater included.
• Beat until soft peaks form when beater is raised.
• Decorate and place cake into the fridge.

Variation of this easy frosting recipe:

Coffee whipped cream
• Add 1 tablespoon of sugar more to the base whipped cream icing.
• Stir in 1 tablespoon of cocoa.
• Stir in 1 teaspoon of instant espresso powder.

Stabilized Whipped Cream

Ingredients:
• 1 cup of heavy cream (250ml)
• 2 tablespoons of powdered sugar
• 1 teaspoon of cornstarch
• ½ teaspoon of Vanilla extract

Prepare the easy frosting:
• Place bowl and beater in the fridge and cool for at least 15 minutes.
• Place sugar, corn starch and ¼ cup (62 ml) of heavy cream into a small sauce pan and bring it to boil, stirring constantly. Let it simmer for few seconds, until the liquid is thickened. Cool to room temperature.
• Add vanilla extract.
• Beat the remaining ¾ cup of heavy cream just until you see traces of the beaters.
• Add the sugar-cream-cornstarch mixture in a steady stream, beating until soft peaks form.
• Decorate and place cake into the fridge.

Variation:
If you use dr. Oetker cream stabilizer, then all you have to do is whip the cream with sugar and 1 pack of the stabilizer. No cooking involved. I have to say, that I prefer this shorter method.

Whipped Cream for Piping

Ingredients:
• 1 cup of heavy cream (250ml)
• 2 tablespoons of sugar
• 1 teaspoon of vanilla extract

Prepare the easy frosting:
• Process all ingredients in a food processor, fitted with a metal blade. If you have a hand blender, then use the blade attachment.
• Beat until peaks form. The whipped cream will not be fluffy.
• Use immediately.

Crème Fraiche Frosting

This easy frosting recipe is wonderful as topping for cheesecakes, especially if covered with fresh fruits.

Ingredients:
• 1 cup of heavy cream (250ml)
• 1 tablespoons of buttermilk
• 1 tablespoon of sugar

Prepare the easy frosting:
• Place the heavy cream and the buttermilk in a jar and close it tightly.
• Place the jar in a warm place such as next to the stove and let it sit for 12 – 14 hours.
• The cream will be thick, but pourable.
• Lightly whip with the sugar and serve.
• You can store unsweetened crème fraiche for up to 3 weeks. It will thicken even more when cooled. When you want to use it, just add the sugar and whip slightly.

Here is an easy frosting recipe using Crème Fraiche for those short on time:

Ingredients:
• 1 ½ cup of heavy cream (375ml)
• ½ cup of sour cream
• 2 tablespoons of sugar

Prepare the easy frosting:
• Place all ingredients onto the fridge and cool for at least 15 minutes, bowl and beater included.
• Beat until soft peaks form when beater is raised.
• Decorate and place cake into the fridge.
