Easy frosting recipe with a success guarantee



I used this cream cheese frosting recipe for my red velvet cake and am very happy with it. It really is an easy frosting recipe since there is no cooking involved, just whipping cheese with butter, sugar, and vanilla. I have plenty of cake frosting recipes, but when I am short on time, I always use this one.

Cream Cheese Icing Recipe

For the icing:
• 16 oz. (450 grams) cream cheese, softened
• ½ cup of butter (1 stick or 113 grams)
• 1 teaspoon vanilla extract
• 2.5 cups of powdered sugar (315 grams)

Prepare the icing:
• Blend together cream cheese and butter until smooth.
• Add powdered sugar and vanilla and mix well.
• You can store the icing in an air tight container in the fridge. You will need to bring it to room temperature before using it, for example by mixing it with an electric mixer.
• If you want the frosting to be stiffer, then you can add up to 4 cups of powdered sugar.

Mascarpone Frosting

For the icing:
• 2 cups of mascarpone (500 ml or 454 g)
• 2 tablespoons and 2 teaspoons of sugar
• 2/3 cup of heavy cream

Prepare the icing:
• Beat the mascarpone and sugar at medium speed, using a whisk beater.
• Gradually add the cream. The frosting will curdle, but continue on beating and it will become smooth.
• The cheese might vary in flavor, so you might need to use more sugar if your mascarpone is sour.
