Chocolate Ganache Recipe

Try this easy frosting recipe



Chocolate ganache recipe is a very easy frosting recipe. I find it not only easy but one of the best from my cake frosting recipes.

It is creamy and fluffy and since I make it without butter, not as heavy as regular chocolate buttercream. One thing that you have to keep in mind is that the chocolate ganache has to be prepared ahead of time since it needs couple of hours to set and thicken.

Below you will find a couple of ganache recipes that I hope you will be able to use.



Chocolate Ganache Recipe

For the ganache:
• 12 oz (340 g) of bittersweet chocolate
• 1 2/3 cup (385 g) heavy cream
• Optional:
• ¼ cup (57 g) butter
• 2 tablespoons of Cognac

Prepare the chocolate ganache:
• Grind the chocolate in a food processor.
• Bring the cream to boil and pour into a mixing bowl.
• Add slowly the chocolate, mix well until all chocolate has melted and the ganache is smooth.
• Cool completely.
• Add the optional butter and/or Cognac.
• Cool for several hours until the ganache thickens to a frosting consistency. I left my overnight in the fridge and in the morning it was ready to use.

This easy frosting recipe yields 2 ¾ cups to 3 cups. It can be stored in a fridge for up to two weeks or frozen for 6 months.

Easy Frosting Recipe

For the ganache:
• 8 oz (227 g) of bittersweet chocolate
• 2 cups (464 g) heavy cream
• ½ teaspoon of vanilla

Prepare the chocolate ganache:
• Grind the chocolate in a food processor.
• Bring the cream to boil and pour into a mixing bowl.
• Add slowly the chocolate, mix well until all chocolate has melted and the ganache is smooth.
• Cool completely. You can cool it in ice water. You should not get the mixture too cold since it will be to stiff.
• Add the vanilla and beat until soft peaks form. If the mixture gets overbeaten, it may become grainy. You can rescue the ganache by re-melting, chilling and re-beating.

This easy frosting recipe yields 4 cups and can be stored for 1 week in the fridge and 3 months frozen.
