Easy Chocolate Chip Cookie Cake Recipe

For the cake batter:
• ½ cup of butter (113 g)
• 4 eggs
• 1 cup of sugar (200 g)
• 2 teaspoons of baking powder
• 1 cup of flour (150 g)
• 2 teaspoon of vanilla extract
• 6 oz. chocolate chips (170 g)

For the chocolate ganache:
• 200 g bittersweet chocolate (7 oz)
• 175 g of heavy cream (6 oz)

Preheat the oven to 375°F – 190°F

Prepare the cake batter:
• Grease and flour a 9” round pan, or a bread pan.
• Whip the butter with sugar.
• Add eggs and vanilla extract, mix well, scarping the sides.
• Add flour, baking powder, and mix well.
• Add the chocolate chips and mix then in using a spatula.
• Pour into the prepared pan and bake for about 40 minutes at 375°F – 190°C.

Prepare the chocolate ganache:
• Grind the chocolate
• Bring 2/3 of the cream to boil in a heavy sauce pan.
• Take it off the heat and add the chocolate.
• Cover it and let it stand for about 5 minutes, allowing the chocolate to melt.
• Mix the melted chocolate to make sure there are no bits in it.
• Add some of the left over cream to achieve the right consistency.
• The ganache should mound a little on a plate when dropped from a spoon, but then smoothly disappear.

You can serve the cake with or without the chocolate ganache.
If you choose to glaze it, then pour the still warm ganache on top of the cake:
• Cover the outside of the cake plate with bits of baking paper; place the cake in the middle, so that it is sitting on the baking paper.
• Pour the ganache in the middle of the cake, letting it drip onto the sides.
• Use a metal cake spatula to touch up the sides by lifting some of the excess ganache from the baking paper.
