Need easy kids birthday cake recipes, try this easy cake recipe

I heard so much about this best red velvet cake recipe that I had to try it out for myself. In fact, I used this easy cake recipe for my daughter’s official 4th birthday. I say "official", since I baked a different easy birthday cake for her birthday party with her friends.

If you are looking for kids birthday cake recipes, then you have found one that will impress them. This easy birthday cake is definitely not boring. Its red color will impress even the skeptical guests.

I tried it once with buttercream icing and I have to admit that I like it better with cream cheese icing. The recipe below is with cream cheese icing, but if you like you could use buttercream as well. I hope that you will enjoy this best red velvet cake recipe.

Best Red Velvet Cake Recipe



For the cake batter:
• 2.5 cups of flour (375 grams)
• 1 teaspoon of baking powder
• 1 teaspoon of salt (you can skip it, since you do taste it a bit)
• 2 tablespoons cocoa powder (unsweetened)
• 2 oz. red food coloring (2 tablespoons of liquid food coloring)
• ½ cup of butter (113 grams)
• 1.5 cups of sugar(300 grams)
• 2 eggs, at room temperature
• 1 teaspoon vanilla extract
• 1 cup buttermilk, at room temperature (250 ml)
• 1 teaspoon white vinegar (5%)
• 1 teaspoon baking soda

For the icing:
• 16 oz. (450 grams) cream cheese, softened
• ½ cup of butter (113 grams)
• 1 teaspoon vanilla extract
• 2.5 cups of powdered sugar (315 grams)

Preheat the oven to 350°F - 175°C

Prepare the cake batter:
• Mix cocoa powder with liquid food coloring to make a thin paste. If you have powder food coloring, add a little water and then add the cocoa. Make sure there are no lumps inside it.
• Beat the butter and sugar until light and fluffy. Beat in the eggs, one at a time. Add vanilla and the red cocoa paste. Just be careful not to get anything stained with it. I suggest using an apron.
• Add flour and buttermilk and mix well together.
• Grease two 9 inch (23 cm) cake pans or one 11 inch (28 cm) large.
• In a small bowl mix the vinegar with baking soda. It will fizz, but it has to in order to make the cake fluffy. You will not taste the vinegar in the cake, so don’t worry. It is needed to activate the baking soda.
• Add the fizzing baking soda to the cake batter and mix in quickly.
• Pour into the prepared pans and place them into the oven.
• Bake for 25-30 minutes at 350°F (175°C), but if you use one form it will be longer. Check with a long toothpick before taking the cake out. Make sure the toothpick comes out clean after inserting it to the center of the cake.
• Cool the cakes and place them into a fridge for a while before frosting. It is easier to frost the cake when it comes from the fridge.
• If you baked one cake, then you need to cut it into two or three layers. I baked one cake since my oven is small and I cannot fit two pans in it on one level. I cut my cake into three layers.

Set up the cake:
• If you baked one cake, then cut it into two or three layers.
• If the cake has peaked, then cut it off. You can always use the bottom of the cake as the top.
• Cover the edges of your cake plate with parchment paper to protect the cake plate from getting dirty while icing.
• Place the bottom layer onto the parchment paper and smear some of the icing onto it, place the other layer on top and ice the top and sides of the cake.
• Remove the parchment paper.
• Refrigerate.
